Singapore Adventure: Father's Day Celebration

For Father's Day, the Cookies went to dinner with our food buddies at  Straits Café  at Rendezvous Hotel.  Supposedly, they are running a 1-for-1 Dinner Buffet for Citibank credit card holders.  But for this specific day, the promotion is suspended in lieu of the holiday.

No biggie, we still enjoyed the food, and of course the company. :)

Hubby Cookie specifically had a blast exploring the dessert station.  And had his peanut paste stuffed glutinous rice balls fix to cap the night. :)


Too bad we were not able to take a group photo.  But here is one of us.  I intentionally cropped the photo to hide our bulging bellies! Hahaha...  We had too much food, I think I had a crab and prawn overload. :))

Singapore Adventure: Christmas Macaroons


Christmas is a great time to bring out the great food. Hehehe...

Well, what do you expect me to do, being stuck in SG away from my family on this festive season? So, I waited for the clock to strike 12 working in my little kitchen.

I whipped up my Cookie's favorite leche flan. I used my tried and tested recipe, of course! Once I've perfected a recipe, I don't want to experiment any further. It will just be a big disappointed to see something nice and beautiful totally defaced just for the sake of giving in to curiosity. :p

I also whipped up something new with the help of my latest kitchen toy! Macaroons! ^_^ Oh, my newest kitchen toy? A Cornell Oven Toaster, something I get to claim for my DBS Credit Card Rewards points. It is only an 8 litre toaster oven, but does the work I want it to do. Hehehe..

And so, here is the product of my latest kitchen experiment... my Christmas Macaroons.




Ingredients:

2 100 gram packs of dessicated coconut
4 eggs beaten
1 250 ml can condensed milk
1 cup light brown sugar
1/2 cup softened butter
1 tbsp vanilla essence
1 tbsp lime juice
100 pcs paper cups


Procedures:

1. Put all the ingredients in a large mixing bowl. Mix well until all the ingredients are well-blended.
2. Scoop the coconut batter into paper cups. Don't fill the cups up to the brim, keep it at 3/4 full only as the batter will rise as it baked.
3. Bake for 10-15 minutes just only until the tops are golden brown.
4. Leave to cool before serving.
5. To store, pack in airtight containers and put in the fridge.

Singapore Adventure: Maja Mais First Attempt

SUCCESS!!!

Ingredients:

2 cups coconut milk
1 370 ml. can Evaporated Milk
1 cup cornstarch
1 cup sugar
1 1/3 cups whole corn kernel


Procedure:


1. Combine all ingredients in a bowl.
2. stir until free of lumps.
3. Strain the mixture into a pan.
4. Cook stirring constantly over low heat until thick. This would take about 30 minutes.
5. Pour into molders. Cool, then refrigerate until ready to serve.



TIP:

Be sure you have greased your molders with vegetable oil before pouring in the thickened mixture so it doesn't stick to the container.

Singapore Adventure: Leche Flan First Attempt


Success!!! Heehee.. ^_^
The recipe.
3 whole eggs
6 egg yolks
1 can evaporated milk
1 can condensed milk
2 tsps vanilla
sugar
water
The procedure.
Mix the eggs, the milk and the vanilla in a bowl. Stir with a wire whisk, do it slowly to avoid bubbles from forming. Strain the mixture to rid of lumps. Double strain if necessary. Set this aside.
Caramelize 1 cup sugar and 1 cup of water in low heat. Let cool and pour into the llanera.
Pour in the egg-milk mixture into the llanera. Cover with foil. Steam for 30 minutes.
Poke with fork. If it comes out clean, it's ready to go. Otherwise, leave to cook for another 10 minutes.
Do not overcook as it will cause your leche flan to form bubbles.

Singapore Adventure: Cookie Day @ Vivo City

The Cookies have been together for 28 months now. And so, to celebrate this, our special day, we went spent it on a day-long date at Vivo City in Harbourfront.

We started the day off with a little stroll at the mall, and a little snack. Then we went to see Robert Downey Jr.'s latest flick, Iron Man.


It is an interesting movie. I am clueless on what the Iron Man comic books are really about. But while seeing the movie, it didn't really matter because the story actually stands on its own. Even mirroring US vs Afghanistan conflicts. Robert Downey Jr is fit for the role, putting in the humor and arrogance required for playing the roles of billionaire industrialist Tony Start, as well as giving his 100% in the action sequences. Nice. Gwyneth Paltrow did an awesome job as well. I can almost forget how much View From The Top disappointed me.


Okay, enough from the movie house. After the movie, we went for burgers at Carl's Jr. We chatted over burgers and we had a fantastic time. This is what I love the most about what my Cookie and I has. We'll never run out of things to talk about... 8->


After early dinner, it's time to get our Mario Kart game for the Nintedo Wii! ^_^ Too bad they don't have the extra Wii Wheel anymore. So, we just got the game with one Wii Wheel.


When Wii game shopping is done, we had a quick visit at Best Denki, and the little innocent visit resulted to a 185 SGD purchase for an electric barbecue grill. :D And so now, the Cookies are a proud owner to the Tefal Excelio Comfort Grill + Griddle. I already have some chicken wings marinating. I am taking this baby for a test drive tomorrow! Wish me luck! ;)




And to cap the day off, a take away from Awfully Chocolate. It's a bit expensive for a 7"/ 0.5 kilo chocolate cake, but it sure is heavenly!!! Just looking at it makes you drool. Yum!






In a couple of hours, another work week shall commence. Can't wait for next weekend. I wonder what's in store. ;)

Singapore Adventure: The Last Piece

There goes the last Goldilocks Pinipig Polvoron I have salvaged from Hazel when she got here. Sigh. Sniff.

I have stared at it, long and hard. Pondering if it is the right time to let it fulfill its purpose for being. It was a gruelling minute, take it now and be done with it, or prolong the agony of craving for the taste of pinipig polvoron. Aarrggh...

I couldn't take it anymore... I snatched it from my night stand, ripped the wrapper and downed it in 30 seconds. Relief. Hehehe...

Sad. I became attached to that last piece of Goldilocks Pinipig Polvoron. Often dreaming of how it has that "just enough" sweetness, and the crunchy pinipig bits. *drool*

But on the bright side, I will soon come to possess a hefty stock of that good stuff. Hehe..

Only 6 days left to Cookie time! Yay!!!

There Is Always Room For Dessert

The Cookies are passionate about a lot of things. This include movies, photos, travelling, and good food. :)
One of our favorite food places include Chili's, specifically the one at Greenbelt 1. The service there is great, and being regular customers, we have become endeared to the service staff. Hi, Pretzel! ;) Aside from the people, of course we love the food. And what is the best way to celebrate a great meal but with a sweet ending of yummy dessert. *yum*
ROUND 1 : The Cookies vs. Molten Chocolate Cake
The contrast of the cold vanilla ice cream with a nice chocolate shell on top of the warm chocolate lava cake was perfect! The delicious dessert was no match for the Cookies. As you can see on the above photos, the sweet stuff has been wiped clean off the plate. Hehehe.. >:)
ROUND 2 : The Cookies vs. High and Mighty Mud Pie
The layers of crushed Oreo cookies and vanilla ice cream with caramel bits in this "high and mighty" dessert truly were mouth-watering. The chocolate and caramel syrups criss-crossed on top of the dessert was not for mere aesthictics only as it added a nice sweet touch to the dessert. Too bad, the Cookies got beat by this mud pie. But there is always next time... Sweet revenge... Hihihi.... ;)
DISCLAIMER: The two desserts captioned were eaten on separate occasions. No need to nod your heads for finally figuring out how come The Cookies seem to have put on a lot of weight over the past year. We just have to put it out there. :P
